The Wu-Yi tea is grown in some of the most mineral-rich and fertile land available in China, it comes from the area of Mt. Wu Yi Shan. China has been known to have some of the best green teas available and this variety in particular has the benefits of growing in what is considered perfect conditions.

The tea is inspected annually by the tea director who visits the mountain area on-site to select only the perfect crops in order to have the tea measure up to the highest of standards. The work of the tea director's efforts in testing done before harvest is started, results in the wonderful tea product sold as Wu-Yi green tea. A superior product comes from superior standards and that is why Wu-Yi green tea is a pure product produced with purity throughout the production process.

Since the Wu-Yi green tea can only be grown in a specific area and is required to be set to a certain standard, Wu-Yi green tea is rare. The Wu-Yi green tea undergoes a unique harvesting process dating back four centuries of testing and perfecting. The first step in harvesting the Wu-Yi green tea is for well-trained traditional artisans follow old traditions by picking leaves early in the morning. The trained craftsmen pick the leaves in one bud and three leaves and the leaves are set to dry immediately after picking to dry and age in direct sunlight. Depending of the season, it will determine for how long the leaves will need to remain in the mountain-side rays of light.

Once the leaves are dried, the leaves are shaken gently into bamboo baskets. This process lightly tenderizes the outer edges of the leaves and is to bring out the distinct and robust flavors of the Wu-Yi green tea leaves. When this has been completed, the leaves are spread out upon Chinese drying mats, hand-woven for this process. The leaves will remain here for up to seventy-two hours. This time-consuming step sets the Wu-Yi green tea apart from other green teas as well. After the tea leaves have dried for a second time, they are moved indoors to induce the fermentation process. The heaviest decision in the production of the Wu-Yi tea is when to halt the fermentation process, it will effect the final result in how potent the benefits and how tasteful the tea will be. The tea director again comes into the scene, to determine upon experience and knowledge when to halt the fermenting of the tea leaves.

After fermenting, the leaves are hand-rubbed to break down the molecular structure in order to release the full flavor, potency and beneficial properties. The catechins that help the body to burn fat and enzymes to catch the fats and remove them from the body will be release optimally through this process.

The tea pieces will be sorted and tested again to be sure the batch is up to the quality standards upheld by the Wu-Yi tea.
